THE RISE OF INFORMED CONSUMERS : EMPOWERING FOOD CHOICES THROUGH TECHNOLOGY
The consumer mistrust towards food brands and the global health crisis, such as the COVID-19 pandemic, has significantly eroded their trust. This situation places the consumer or eater in front of a changing food landscape, thereby increasing their anxiety and making it increasingly difficult for them to know what they are eating. This article aims to clarify, through a literature review, a new consumption trend embraced by the consumer or eater when choosing their products. It primarily involves the search for information on the products they should consume before making any purchasing decision. This behavior has developed with the advent of the Internet and the growth of web technologies, providing the consumer with the range of information they need to make an informed decision. Technology assists the consumer by enlightening their choices, filling in missing information, and empowering them, in other words, enabling their autonomy. Thus, technology transforms the consumer or eater from a passive actor into an autonomous and active participant, shaping their consumption and diet. They have become a "consumer-actor". This power, perceived through technology, alters the way the consumer or eater selects their food.
